You can copy files from iTunes to anywhere else (just select them and drag them to the new location). This would include dragging them to whichever MP3 player you chose.
As for sites, if you're asking about buying music online, I'm not aware of any others that will work in Australia. The other biggies in the US are Walmart and Amazon — you could try them, but I'd be surprised if they've got agreements for Australia.

Hi Ben, I get free downloads once a month from bandit.fm which has all the sony-bmg artists (there are tonnes). That works fine with Itunes, but probably would be easier to use if I didn't have an IPod.
