This has nothing to do with church music, but i have the same problem with people on TV saying police as one syllable. Plice. What's with that?
Depends on where you come from. In recieved pronounciation it tends to be one syllable, which is possibly why so many hymn writers are ok with it.
I've tried to get away with it. Always failed.
